Crabmeat salad

When we lived in Gold Coast we have been to the seafood restaurants in Broadbeach. Yellowfin restaurant was one of our many choices. We went there few times and we loved the Happy Hour.

We liked to order Spanner Crab as our entree. I love the crispy and fresh taste of this salad. Recently I had guests come for lunch with us on a warm day. I made this dish and it was a big hit.  In my version of spanner crab, I don’t have green mango, replacing it with green apple and added chopped chestnut. It is crunchy and all my guests enjoy it.

Crabmeat &Crispy Wonton Salad

Ingredients

  1. 1 can(170-200g)crab meat, drained or fresh crab meat
  2. 2 cups mixed leaves salad
  3. 2 roma tomato, diced or any crunchy tomato
  4. 1 Lebanese cucumber, diced
  5. 1 green apple, julienne
  6. 1 can(227g) chestnut, drained & diced
  7. 1/4 red onion, thinly diced
  8. 1/4 cup fresh parsley, chopped
  9. 8 slices(sheets) yellow wonton wrapper for dumplings
  10. 1/4 cup rice bran oil to fry
  11. Salad dressing
  12. 2 tablespoons red wine vinegar or apple cider vinegar
  13. 2 tablespoons extra virgin olive oil
  14. salt & pepper for seasoning

Instructions

  1. In the mixing bowl, add all ingredients together except the liquid, and wonton wrapper and cover the salad bowl with the cling film and keep it in refrigerator for an hour or until serve.
  2. On the medium heat, add the rice bran oil to the pan, once the oil hot, add the wonton sheets, 1-2 sheets at a time. fried about 2-3 minutes or until golden and cripsy, drained and cool on the towel papers. Once it totally cool, keep in the air tight container until serve.
  3. Salad dressing
  4. Before serving, make salad dressing by mixing the olive oil and vinegar, salt and pepper in the jar, shake & mix well until combined.Then add the salad dressing to the cool salad and mix it gently.
  5. How to serve
  6. Lay one crispy wonton at the bottom of the plate, then add a spoonful of the crabmeat salad on the top and lay another crispy wonton, and a spoonful of salad.
