Almost All children here in Australia love pizza as it is easy to hold and eat, and there are varieties of toppings. When we lived in the Gold Coast hinterlands, our house was far from the shops. My daughter was playing netball every Saturday and she sometimes received a pizza voucher as a reward for playing well. So we went to redeem her vouchers at Pizza Capers on the way up to the mountain and we always bought some extra as well. My daughter loves Hawaiian, but we (the adults) prefered Italian Connection (Salami or pepperoni).We like to make our own pizzas from scratch. I did this many times until I got the right recipe. Here is my version of pizza.


Prep Time: 1 hour, 10 minutes

Cook Time: 15 minutes

Total Time: 1 hour, 25 minutes


Prep time is including resting time


    Pizza Dough
  1. 2 1/2 cups(375g) "OO"or Pizza flour
  2. 1 1/2 teaspoons(7g) dry yeast
  3. 1 teaspoon raw sugar
  4. 1/2 teaspoon grind salt
  5. 1 cup(250ml) luke warm water
  6. 1 tablespoon olive oil
  7. Pizza Sauce
  8. 2 tablespoons garlic, finely chopped
  9. 1 brown onion, finely chopped
  10. 1 can(400g) diced tomato
  11. 2 tablespoons tomato paste
  12. 2 tablespoons raw sugar
  13. 1 1/2 teaspoons grind salt
  14. 1 cup(250ml) water
  15. 2 tablespoons olive oil
  16. 1 teaspoon oregano powder


    Pizza Dough
  1. Preheat the oven at 50C and then turn off
  2. In a small bowl, add 2 tablespoons of water, and the pinch of sugar, stir in the dry yeast with plastic spoon, and leave for 5 minutes to activate
  3. Sift the flour and salt into a large mixing bowl,then pour the yeast mixture into the centre, add the rest of luke warm water. With machine, use knead function, knead the mixture together for 5 minutes or knead with hands for 10 minutes.
  4. Put the dough into the large greased bowl, using the tip of shape knife cut a cross into the surface of the dough, then cover with cling film or a damp tea towel to prevent it drying out. Leave the dough to prove in the oven for an hour, it should double in volume.
  5. Divide the dough into 2 balls, knock back and knead for a minute, then spread it out on greased or pizza tray, rest for another 30 minutes.
  6. Take the pizza trays out of the oven and heat the oven to 200C
  7. Spread the cold pizza sauce onto pizza and decorate the pizza with the desired topping.
  8. Pizza Sauce
  9. Add the olive oil into the the pan or small pot, add the chopped onion, cook until it's translucent, then stir in the garlicfor a minute, then add the diced tomato,and the tomato paste. Simmer for 5 minutes and add in the salt, the sugar, and the oregano stir into combined and turn off the heat. Set aside to cool.
  10. Salami or Pepperoni or Italian Connection
  11. Spread pizza sauce onto the pizza and decorate with salami slices, anchovies, chopped black olives, sliced capsicum, sliced red onion and mozzarella cheese
  12. Bake in preheat oven at 200C until cheese is melted or 12-15 minutes. Turn off the heat and garnish with fresh Italian basil leaves before serving
  13. Hawaiian
  14. Pizza sauce, diced ham, diced pineapple and mozzarella cheese
  15. Margarita
  16. Pizza sauce, slice fresh tomatoes and mozzarella cheese cut into round shape, garnish with fresh basil leaves before serving.
  17. Prosciutto
  18. Spread pizza with pizza sauce and bake. Before serving, decorate with prosciutto and garnish with rocket salad and thinly slice parmesan cheese
